A cooking appliance includes burners having ports that are aligned in a defined alignment with respect to an adjacent structure of a burner body or the cooking appliance within a piloting zone so that the adjacent structure guides the formation of a flame kernel at an outlet of the port. The adjacent structure may be ports which also form flame kernels withing the piloting zone of the burner port outlet, a structural portion of the burner body such as an extended lip protruding beyond the burner port or a separate structure such as a flame rod or other target that stabilizes the flame kernels at the burner port outlet. Such structures provide a method for improving the turndown ratio of burners by preventing lifting or backlash of the flame kernels generated at the burner port outlets by aligning the ports in conjunction with an adjacent structure within a piloting zone.

A reusable openable/closeable clamp comprising an arcuate-like strap having two generally opposing, spaced ends, each of which has been bent outwardly of the general periphery of the clamp to form first and second ears with one of the ears having an aperture therein and the other of the ears having a projection thereon extending outwardly from its respective ear, with the projection being adapted to be received in the aperture in the closed condition of the clamp to hold the strap in closed clamping condition, said strap further having at least two raised segments forming a restraining means between said segments. Removal of the projection from the aperture enables the clamp to spring to open position due to the natural resiliency of the strap portion.

Apparatus for two-sided cooking comprises one or more upper housing assemblies each having a pair of spaced bayonette members which are removably insertable in a holster brackett. The bracket is readily attachable to the rear of a conventional cooking grill thus retrofitting the grill conveniently for two-sided cooking. A plurality of lightweight platens are mounted in the upper housing by quick release pins which permit the upper platens to float relative to the housing. Because of the lightweight, multiple and floating nature of the upper platens, the housing can be lowered to the grill surface as to completely enclose the items being cooked, thus containing heat and trapping moisture in the cooked product. In addition, food products having differing thicknesses can be cooked simultaneously without appreciable sticking.
